Confirm It With an Independent Thermometer
Hang or stand an oven-safe thermometer roughly where your food actually sits, let a full preheat cycle finish, and read it again about ten minutes later once the cavity has stabilized. Seeing the same gap show up on more than one bake is what separates a real sensor drift from an off day with a particular recipe.
Convection Fans Introduce a Second Variable
On the convection setting, a fan that’s slowed down, or a large pan blocking the rear vent, creates uneven pockets of heat that look like a sensor problem but have a completely different fix.
